Healthy Cookies Recipe

🍪 Healthy cookies? Yes, please! Our recipe with Mazola oil is the perfect way to enjoy a sweet treat without the guilt.

Ingredients

For the cookies:

3 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

¾ cup Mazola oil 

1 cup sugar

1 large egg, slightly beaten

3 tablespoons whipping cream

1 teaspoon vanilla extract 

For the icing:

1/3 cup softened butter

450g powdered sugar

1/4 cup milk

1 teaspoon vanilla extract


Instructions

1. In a medium bowl, whisk together the flour, baking powder, and salt. 

2. In another bowl, beat together the Mazola oil and sugar until creamy with a hand mixer. Mix in the egg and vanilla, followed by the whipping cream. Mix in the flour mixture just until no more dry streaks of flour remain.

3. Divide the dough into two. Roll each half out between two sheets of parchment paper. This makes the dough easier to roll out.

4. Transfer the sheets of cookie dough, still sandwiched between parchment, to the fridge. Chill for at least one hour or up to overnight.

5. Peel off the top layer of parchment from one of the sheets of cookie dough. Use cookie cutters to cut out the cookie shapes. 

6. Transfer the cookies to a parchment sheet. Bake for 5-8 minutes at 200°C.

Decoration:

1. With a hand mixer, beat together butter, powdered sugar, milk, and vanilla extract until smooth.

2. Spread the icing onto the cookies with a butter knife or a spoon. Use piping bags to add decorative accents, if desired.
