Nasi Katok Recipe

Ingredients:

4 chicken thighs

1 egg

25g flour

25g cornstarch

Mazola oil for frying

Steamed rice

8 slices cucumber

Fried chicken seasoning:

2 tbsp grated garlic and ginger paste

1 tsp turmeric

1 tbsp soy sauce

Sambal sauce:

60g onion

2 cloves garlic

1 knob ginger

1/2 bell pepper

2 green chili peppers

1 tsp soy sauce

1 tsp palm sugar

4 tbsp Mazola oil 


Instructions

1. Mix fried chicken seasoning together in a bowl, add in and coat the chicken, allow to marinate for about 20 minutes.

2. Prepare the sambal. Place the onion, garlic, ginger, bell pepper and green chili pepper into a food processor to turn into a paste. 

3. Heat Mazola oil in a fry pan over medium heat, saute the sambal. Add and mix in the soy sauce, tamarind paste and palm sugar, then simmer over low heat for about 15 minutes. 

4. Crack open and beat the eggs in a bowl. In a separate bowl add and mix together the flour and cornstarch. First coat the marinated chicken thighs in the egg and then the flour and cornstarch.

5. Heat Mazola oil in a pot. Once the temperature reaches 180 C, add in the chicken and deep-fry to golden.   

6. Place the rice onto plates, top with the fried chicken, pour on the sambal and garnish with the cucumber.
