Ingredients
1 cup sago starch (also known as ambulong or ambuyat flour)
4-5 cups water
Fried fish or shrimp (optional)
Fresh vegetables (cucumber, lettuce, okra)
Mazola oil for frying
1 cup water
2 tablespoons tamarind paste
2 cloves garlic, minced
2-3 red chilies, chopped
1 tablespoon fish sauce
1 tablespoon sugar
1 teaspoon salt
Instructions
1. In a large mixing bowl, add the sago starch.
2. Bring 4-5 cups of water to a boil.
3. Gradually pour the boiling water over the sago starch while stirring continuously
until it becomes a thick, glue-like consistency.
4. The Ambuyat should be translucent and sticky. Set it aside.
5. In a small saucepan, combine water, tamarind paste, minced garlic, chopped red
chilies, fish sauce, sugar, and salt.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5-10
minutes until it thickens slightly.
7. Adjust seasoning to taste. Remove from heat and set aside.
8. Clean and season the fish or shrimp with salt and a bit of turmeric powder.
9. Heat Mazola oil in a frying pan over medium heat.
10. Fry the fish or shrimp until golden brown and crispy. Remove and drain on
paper towels.
11. Wash and cut the fresh vegetables into bite-sized pieces.
12. Place the Ambuyat in the center of a large serving platter or individual plates.
13. Arrange the fried fish or shrimp and fresh vegetables around the Ambuyat.
14. Serve with the tamarind sauce on the side.
