Pattaya Fried Rice

INGREDIENTS

For the Omelette: 

  • 2 – eggs
  • 2 tsp – milk
  • 1/2 tsp – corn flour or all purpose flour
  • salt to taste
  • 2 tsp – Mazola Oil

For the Fried Rice: 1 cup (100 g) – rice (cooked and cooled)

  • 1 tbsp – Mazola Oil
  • 1 bunch spring onions, finely chopped
  • 6 cloves garlic, finely chopped 
  • 2 tsp – tomato sauce
  • 2 tbsp – capsicum, chopped
  • 2 tbsp – carrot, finely chopped
  • Salt to taste
  • 1/2 tsp – pepper powder (optional)
  • 1/2 tsp – oyster sauce (optional)

INSTRUCTIONS

For the omelette: 

  1. Whisk the egg, milk, flour and salt together in a medium-sized bowl.
  2. Lightly coat an omelette pan or big skillet with cooking oil and heat over medium heat for 1 minute. Pour the omelette mixture, spread evenly and cook until it begins to set on the bottom.
  3. Once it turns light golden, remove carefully with a flat spatula.

For the fried rice: 

  1. Heat oil in another wide pan/wok. Add the spring onions and garlic and fry for 6-8 minutes.
  2. Add tomato sauce and stir well. Add carrot and capsicum (or boiled chicken/prawns). Saute for 3-4 minutes.
  3. Add the rice and salt to taste. Mix well. Do not cover with a lid and fry for 8 minutes on low heat, stirring continuously. Sprinkle pepper powder/oyster sauce if required.
  4. Final presentation: Place the omelette on a serving plate and arrange the fried rice in the centre. Wrap carefully (like a packet) and serve with tomato slices, cucumber slices and chili sauce.
