Ingredients:
- 680g boneless, skinless chicken cubes
- 1/3 cup MAZOLA Corn Oil
- 1 Cinnamon Stick
- 3 Cloves
- 3 Star Anise
- 3 Cardamom Pods
- 1 Lemongrass Stalk (white part) pound & cut into strips
- 1 cup Coconut Milk
- 1 cup Water
- 5 Kaffir Lime Leaves (bruised)
- 5 tablespoons Toasted Grated Coconut
- 1 tablespoon Sugar
- Salt
✅ Rendang Paste:
- 6 Shallots
- 1 inch Galangal
- 3 stalks Lemongrass (white part)
- 4 cloves Garlic
- 1 inch Ginger, peeled
- 10 dried Chilies, seeded
Instructions:
1️⃣ Add all Rendang Paste ingredients in a food processor and blend well.
2️⃣ Heat corn oil in a skillet, add in Rendang Paste, cinnamon, cloves, star anise, and cardamom pods.
3️⃣ Stir-fry until aromatic.
4️⃣ Add chicken and lemongrass, stir until combine well with spices.
5️⃣ Add coconut milk, water, and simmer on medium heat.
6️⃣ Stir frequently until the chicken is almost cooked.
7️⃣ Add the kaffir lime leaves, toasted coconut, and stir until well blended.
8️⃣ Turn to low heat, cover with lid and let it simmer for approximately 30 minutes until liquid has dried up.
9️⃣ Add sugar and salt to taste (if necessary).

BAHAN-BAHAN
- 680g ayam tanpa tulang tanpa kulit
- 1/3 cawan Minyak Jagung Mazola
- 1 Batang Kayu Manis
- 3 Ulas bawang putih
- 3 Biji Bunga lawang
- 3 Biji Buah Pelaga
- 1 Batang Serai (bahagian putih) ditumbuk, dipotong menjadi jalur
- 1 cawan Santan
- 1 cawan Air
- 5 Daun Limau purut
- 5 sudu besar Kelapa Parut
- 1 sudu besar Gula
- Garam
Pes Rendang:
- 6 Biji Bawang Merah
- 1 inci Lengkuas
- 3 tangkai Serai (bahagian putih)
- 4 ulas Bawang Putih
- 1 inci Halia,dikupas
- 10 Cili kering
CARA PENYEDIAAN
- Masukkan semua bahan Pes Rendang dalam pengisar dan kisar.
- Panaskan minyak jagung dalam kuali, masukkan Pes Rendang , kayu manis, bunga cengkih, bunga lawang, dan buah pelaga.
- Tumis hingga naik bau.
- Masukkan ayam dan serai, kacau hingga sebati dengan rempah.
- Masukkan santan, air, dan reneh dengan api sederhana.
- Sentiasa kacau sehingga ayam hampir masak.
- Masukkan daun limau purut, santan, dan kacau sehingga sebati.
- Turunkan api, tutup dengan penutup dan biarkan mendidih lebih kurang 30 minit sehingga cecair kering.
- Masukkan gula dan garam secukup rasa (jika perlu).
